Chicken Wellington
Sounds pretty good, doesn't it? It turned out good also. The time involved makes it a weekend dish for me. Plan on an hour prep and another hour to the plate. If you are having company and can plate instead of serving "family style" you can make a nice impression.

- 2 large boneless, skinless chicken breasts
- salt and pepper
- 2 tablespoons butter
- 1 medium yellow onion, finely chopped
- 1 tablespoon butter
- 4 oz white or brown mushrooms
- 4 tablespoons fresh parsley, minced
- ¼ cup dry white wine
- 2 oz gorgonzola
- 2 slices prosciutto ham
- 1 sheets of puff pastry (rolled out to about 7 inch diameter squares)
- 1 egg mixed with 1 tablespoon cold water
- For the Parmesan Morel Cream Sauce:
- 1 tablespoon butter
- 1 tablespoon magic flour
- ½ cup heavy cream
- 2 tablespoons reserved mushroom and parsley
